As autumn settles in, cooler days and cozy gatherings with friends tend to follow. It is also a season that naturally invites reflection and a little nostalgia through shared meals. Many vintage fall dishes deserve a place on the table, from appetizers and mains to sweets, and one especially comforting dessert is apple brown betty.
Among the many baked favorites that appear this time of year, such as buckles, crumbles, crisps, cobblers, grunts, and slumps, a brown betty stands out for its casserole-style format. The distinction is easy to see when comparing it with a buckle: a typical brown betty layers fruit with buttered breadcrumbs and bakes until deeply golden, while a buckle relies more on a coffee cake-like batter mixed with fruit.
Apples are a classic seasonal choice, especially when paired with cinnamon, brown sugar, and plenty of butter. The result is a dessert that brings warmth and comfort to the table while leaning into a nostalgic, vintage feel. Fresh fruit and bread can be transformed into something especially satisfying, even more so when served with a scoop of ice cream.
How to make the best apple brown betty
Tasting Table recipe developer Jessica Morone created a traditional apple brown betty à la mode that is well suited for a fall dessert spread. The recipe makes smart use of stale bread and tart Granny Smith apples to produce a rich, satisfying dish. With pantry staples and very little hands-on work, it comes together quickly and easily.
To prepare it, combine chopped apples and lemon juice with cubes of stale bread in the bottom of a greased baking dish. Sprinkle the apples and bread with cinnamon and sugar, then repeat with another layer. Scatter cubes of butter over the top and drizzle on water. Bake it covered at first, then uncover it so the top can turn golden brown. Serve it warm with ice cream for a pleasing mix of flavor, texture, and temperature.
This dessert can also be adapted to suit different tastes. For a more festive version, add chopped candied pecans and a drizzle of maple syrup. To emphasize its old-fashioned character, use stale slices of WonderBread Classic White Sandwich Bread. You can also swap the Granny Smith apples for a sweeter variety such as Honeycrisp for a fuller fruit flavor.
